Minestrone soup with green beans, zucchini and potatoes

You will need the following

Ingredients

Virgin olive oil

350 g of flat green beans

1 zucchini

1 L of Vegetable Broth Aneto

1 small leek

vegetable broth aneto

Directions

Step by step

Peel the potatoes and cut them into very small cubes. Wash the beans, slice them in half lengthwise and cut small cubes. Wash and cut the zucchini into slices and then into very small cubes. Put on one side

Clean the leek and slice finely. Saute in a saucepan with a tablespoon of olive oil

Add the vegetables, stir for a few minutes and add 1 liter of organic low salt Aneto Broth.

Bring to the boil then simmer on a low heat until the vegetables are cooked. Don’t over cook the vegetables!
