Monkfish casserole

You will need the following

Ingredients

1 L of organic fish broth

400 g monkfish cheek

100 g leek

10 almonds

1 teaspoon of saffron

400 g potatoes

100 g green pepper

120 g onion

Parsley

Extra virgin olive oil

Perejil

2 garlic clove

Salt

Step by step

All ingredients has been prepared to ready cook with Aneto.

Clean and chop the onion, the pepper and the leek. Reserve.

Toast the almonds and the cloves with a drizzle of olive oil. Put them in the mortar where previously we will have ground the saffron and then add the chopped parsley. Reserve.

In the same cooking pot poach the chopped vegetables, add the fried tomato, sauté it and finally add sliced potatoes.

Soaking it with the broth and let it simmer until the potatoes are cooked.

Add the diluted blend with a little broth.

Finally, add the sliced monkfish cheeks, let it simmer 2 minutes then salt to taste and it will be ready to serve. Enjoy it!

Add the chopped slices of monkfish and bring to the boil for 2 minutes.
