Cream of broccoli with chia, mushroom and walnut

You will need the following

1 l Aneto Vegetable Broth

1 leek, white part

1 potato

1 broccoli

2 tablespoons of chia

80 gr of hazelnuts

4 large mushrooms

Purple broccoli sprouts (optional, decoration)

Olive oil

Salt

Prepare all the ingredients.

Cut the leeks and mushrooms into thin slices, peel the potato and cut it into cubes, crumble the broccoli into bouquets, chop the hazelnuts.

Sauté the leeks in olive oil until soft, add the potatoes, pour in ANETO VEGETABLE BROTH, bring to a boil for 20 minutes or until the potatoes are cooked.

Add the broccoli, boil for 5 to 8 minutes, until tender, remove from heat, blend until a smooth cream is obtained. Rectify salt if necessary.

Saute the sliced mushrooms in a pan with olive oil, season, add them to the cream along with the chia and hazelnuts.
