Autumn Legume Creams

We are still in Autumn mood. This week the legumes have been the protagonists in our kitchen.

Here you are 3 recipes for cooking creams with legumes:

CREAM OF PARDIN LENTILS WITH ONION, CARROTS, TOMATO AND SESAME TOASTED.

Ingredients:

  • 400 g of lentils
  • 750 ml of vegetable broth
  • 1 onion julienne
  • 2 diced carrots
  • 1 diced tomato
  • 2 tablespoons of sesame
  • Olive oil
  • Salt
  • Garlic and parsley

Step by step:

  • Sauté the onion in a pan with a tablespoon of olive oil over low heat, add the carrot and tomato and a pinch of salt.
  • We brown the sesame in a pan. Reserve it
  • We crush the lentils together with the vegetables and the broth until you get a cream.
  • When serving add the sesame.

CREAM OF AZUKIS WITH ONION, CARROT AND TOMATO.

Ingredients:

  • 400 g of azukis
  • 750 ml chicken broth
  • 1 onion julienne
  • 2 diced carrots
  • 1 diced tomato
  • Olive oil
  • Salt
  • Garlic and parsley

Step by step:

  • Sauté the onion in a pan with a tablespoon with olive oil over low heat, add the carrot and tomato with a pinch of salt
  • Grind together with the azukis and broth until you get a cream.
  • Add garlic and parsley to taste.

CREAM OF “ALUBIAS” A LITTLE MEXICAN (based on the recipe from El Comidista)

Ingredients:

  • 400 g of cooked red beans
  • 600 ml chicken broth
  • 1 chopped onion
  • 1 chopped carrot
  • 1 chopped chilli pepper
  • ½ teaspoon cumin, or less
  • 1 lime
  • 1 chopped avocado
  • 1 chopped tomato
  • Olive oil
  • Salt

Step by step:

  • Sauté the onion, carrot, chilli and cumin in a pot with olive oil over medium heat until the vegetables are tender.
  • Add the beans and the chicken broth (or cooking) and bring it to a boil. Crush it and salt to taste. If it looks very dense, add broth little by little until it reaches the desired thickness.
  • Serve it with avocado and tomato seasoned with lime juice, salt and add a little olive oil as garnish.
