Cream of Red Prawn Soup (Gourmet Aneto)

After concluding an agreement with suppliers of the ports of Arenys de Mar, Blanes, Palamós, and Port de la Selva, we received in our kitchen 800 kilos of fresh prawns just 6 hours after being caught.

As specified in the recipe, we pealed the prawns the traditional way, we set aside the meat and flambéed the prawn's heads and peel with a good cognac and then we sieved them to obtain all their juice.

This juice is then added to a sofrito made with virgin olive oil, sweet onion, and ripe tomatoes. We then add our natural fish broth. We add the meat of the prawns and beat it all until we obtain this exquisite and unique cream soup.

When finished, we cool it; leave it to sit and pack it in a carton, applying the UHT process.

We have achieved packing this recipe within less than 10 hours after the prawns were caught.

Ingredients:

The ingredients needed to prepare this recipe are:

  • 750 grams of FRESH Red Prawns from the Mediterranean
  • Fish broth (*)
  • Sauteed vegetables (**)

(*) Water, monkfish, onions, carrots, celery, leeks, tomatoes, cod, fennel and sea salt

(**) Extra virgin olive oil, sweet onions, tomatoes, carrots, aged brandy, garlic, extra-category paprika from Murcia, ground white pepper and a pinch of bay leaf.

Recommendations:

It is a cream soup with a smooth consistency and intense flavour. We recommend serving as first course (4 generous servings) or as a starter / tasting (6 to 8 servings).

The product was named best ready-made dish in the past edition of the Barcelona Food Trade Fair

Barcelona, April 2010 - The cream of red prawn soup by Aneto Natural won the 4th Gold Medal National Award to food quality to the best ready-made dish in the food trade fair Alimentaria 2010 held in Barcelona.
The jury of this award, sponsored by the project Ciudad Agroalimentaria de Tudela (Navarra), emphasised after a blind tasting "its smoothness and flavour of prawns, very light and at the same time intense. Versatile when it comes to serving. An off the shelf product that could well be heute cuisine. Natural and fresh product".

It also won the Innoval award to the best novelty in recent years in the category of Rice dishes, pasta and soups.
